The contribution of enzymes present in cytosolic
fraction of mammary tissue, other than XOR, to the activation of ethanol to acetaldehyde, for example, alcohol
dehydrogenase (ADH) may be more limited. On one
hand, previous studies
[23]
showed that no ADH activity
was found in homogenates of rat mammary tissue. More
recently, our laboratory reported traces of ADH activity in the cytosolic fraction of mammary tissue that was
about 16 times smaller than in the liver
. By the other
hand, Triano et al
reported that human mammary tissue contains a class of ADH having a limited potential to
transform alcohol to acetaldehyde
