Dry potato peel waste (1.25–17.5%) was mixed with 100 mL dis-tilled water.
The mixture was treated with Ternamyl 120L (15 U,30 U or 45 U) at 90◦C and pH 7.0 followed by amyloglucosidase(3 U, 6 U or 9 U) at 60◦C, pH 4.5.
Samples were withdrawn fromthe reaction at different time intervals. These samples were heated at 100◦C for 5 min, cooled and then centrifuged for 10 min at8000 rpm.
The supernatants were assayed for reducing sugar by3,5-dinitrosalicylic acid (DNS) method.
