Rose oil
The well-known essential oil is probably rose oil, produced from the petals of Rosa
damascena and Rosa centifolia, family Rosaceae. Steam-distilled rose oil is known as "rose otto"
while the solvent extracted product is known as "rose absolute". It is used more commonly
in perfumery. The key flavor compounds that contribute to the distinctive scent of rose oil
are beta-damascenone, beta-damascone, beta-ionone, and oxide.
