2.1. Organism
A local isolate of homofermentative, lactic acid producing
bacterial strain was identified as Lactobacillus sp.
KCP01 by morphological and biochemical tests according
to Bergey’s Manual of Determinative Bacteriology (Holt
et al., 1994). It was grown on MRS medium and maintained
in 50% glycerol and stored below 0 C.
