2.1. Extraction of henequen juice
To obtain the juice, henequen leaves were collected from the
production facilities in the township of Baca, in the state of Yucatán.
In the laboratory, the leaves were washed and the juice was
extracted by passing them through a three mass mill in which
the leaves are pressed. A bright emerald green juice was obtained
which was then filtered to eliminate the solids in suspension. The
amount of soluble solids and reducing sugars was measured. Subsequently,
the juice was sterilized at 121 C for 1 h and at a pressure
of 1 atm to partially hydrolyze the inulin.
