Durian (Durio zibethinus Murr) is a tropical fruit grown widely in Southeast Asia (Subhadrabandhu and Ketsa, 2001). It is nutritionally rich in carbohydrates, protein, fat, phosphorous, iron and vitamin A. To overcome the problem of oversupply during the harvesting season, various value-added durian products have been developed. Durian chips are one of the most popular durian products, made conventionally by deep frying. Based on health issues, fried durian chips may not be accepted by some consumers
(Jamradloedluk et al., 2007).
