Salami is one of the meat products that contain high fat content. Normally, fat in meat product is from animal origin such as pork back fat and tallow fat. Commercial salami usually contains up to 30% back fat (Wirth, 1991). Fat is rich in saturated fatty acids and cholesterol. It has been shown that high saturated fatty acids and cholesterol consumption is related to cardiovascular diseases in human. Several techniques are developed to reduce the cholesterol and fat in meat products. It is possible to replace fat with other ingredients such as vegetable oil and gum (Weiss, Gibis, Schuh, & Salminen, 2010).
