•One good free range chicken apx 3lb cut into eight portions
•One onion roughly chopped
•One fat clove of garlic thinly sliced
•One carrot roughly chopped
•Good sprig each of thyme and parsley plus parsley to garnish
•125 gm unsmoked bacon lardons
•20 button mushrooms
•Bottle of red wine (see above)
•3 tbs Cognac
•100ml good chicken stock OR ½ tsp good stock powder such as Knorr
