The minimum pH(5.2)and maximum lactic acid content (184.0 mmol/kg) were found on the third day of
incubation (linear and quadratic , Po0.01; Table5 ). The concentration of glycinin (linear and quadratic, Po0.01 )and β-conglycinin(linear, Po0.01) did not decline until d 4 and 5 , respectively , and prolonging the incubation duration beyond 5 d did not result in further decreases in their concentrations . The CP concentration was not affect by incubation period.
