The sensory quality of each replicate pulp was evaluated
by visual appearance, taste, flavor and acceptability. Samples
of fruit pulp were presented in random order to 15
panelists for sensory evaluations. They were rated on a
nine-point hedonic scale (9, excellent; 7, very good; 5,
good; 3, fair and 1, poor) for visual appearance, sweetness,
sourness, off-flavor and overall flavor; intensity and acceptability
increased with the numerical value
