Juice is a liquid that is naturally contained in fruits and vegetables. Various countries and regions have their own standards with regard to the production and sale of fruit juices, and it is important that a producer complies with the requirements of the country in which the product is made, as well as the country where the product will be sold (if they are different). As with any other food processing, the use of Good Manufacturing Practice (GMP) is critical to the successful packing of these products. This chapter describes the production of various heat-processed fruit juices, water, and beverages.
