2.3. Particle size distribution
Flour particle size was measured using Malvern Mastersizer 2000. Flour was suspended in water at 1% (w/w) concentration. Particles size was measured assuming the refractive index of 1.5 and absorption index of 0. Sample was dispersed in the dispersion unit using water as dispersant (stirring speed at 2040 rpm), and
the obscuration percentage was kept between 10% and 20%. The volume-based and surface area-based particle sizes were 58 and 24 lm, respectively.
