The
level of oleic and linoleic acids in safflower seed oil
were the highest (75%-90%) among all plant oils. It
is very desirable for human nutrition due to the high
degree of unsaturation and notable level of
α-tocopherol [5], which has the ability to decrease
blood cholesterol level and delay senility. In spite of
those traditional usages, safflower has recently
emerged as a platform for production of secondary
metabolites or transgenic products, such as
γ-linolenic acid, human insulin, apolipoprotein,
growth hormones and so on
