1 cup, packed pitted dates
½ cup quick oats (gluten-free if needed)
¼ cup hemp seeds
2 tbsp organic brown rice protein
¼ cup + 2 tbsp unsweetened fine coconut
1 tsp cinnamon
coconut for rolling (optional)
Instructions
Place all ingredients in a food processor or high-powered blender.
Mix until it forms a dough.
Roll into balls. If your dates aren't moist enough, you may need to add a little water.
Roll balls in unsweetened fine coconut (optional).
Makes 12 balls. Store in the refrigerator.
