Freeze dried. HPMC and MC can be used as alternative stabilizers to hydrogenated oils in peanut butter, and may be applied to other but and seed butters. At addition levels between 1 and 2% the desirable oil stability and texurtal properties of commercial products (i.e., using hydrogenated oilstabilizers) can be achieved. The main mechanism of stabilization is likely due to physical entrapment of oil within expanded particles of freeze dried HPMC/MC sheets.
Spray dried HPMC was used in preliminary trials to examine its effectiveness as a stabilizer; hower, it was found to be less effective than freeze drying. Possible further research could be conducted such as using more efficient method to prepare the dried HPMC and MC than freeze drying. such as extrusion or a team explosion followed by drying.
