In the control fermentation, the Enterobacteriaceae counts increased until 24 h,reaching a population of 8.1 log CFU/mL, while in the inoculated assays,the Enterobacteriaceae populations decreased and were not detected at 48 h in the LP+PA and LP+PA+TD assays.
