Encapsulation of probiotics, Lactobacillus
acidophilus 547 and Lactobacillus casei 01, in alginate beads coated
with chitosan has been reported to improve the survival of probiotics
in both yogurt and severe conditions, such as in simulated
gastric, intestinal juices and bile salt solution (Krasaekoopt,
Bhandari, & Deeth, 2004).
