The raw sample after 7days storage decreased to
282.7 170.8 g. The other three methods of preservation,
when kept at 4 8C proved quite efficient, only decreasing to
280.06 81.6 g for the cooked-chilled samples, 297.2 98.5 g
for the gas-flushed samples and 366.3 73.9 g for the vacuum
packaged samples. There was no significant difference
( p > 0.05) between any of these samples for skin strength at
days 0 and 7. Again the vacuum-packed samples were the
most efficient at preserving the skin strength of the prawns at
the 4 8C storage temperature
