Rice can be classified into two major groups, Indica group (O. sativa L. subsp. indica Kato) and Japonica group (O. Sativa L. subsp. japonica Kato) in a broad sense ( Taira and Chang, 1986). Therefore, the two major rice cultivars were selected, which are Ilpum and Dasan, these being representative of Japonica group and Indica group in Korea, respectively. The purpose of this study was to investigate the changes in the levels of various lipid substances during rice seed development in the two rice cultivars. The lipid substances examined in the present study were lipid extract content, fatty acid composition (1–8), γ-oryzanol (9–12), policosanols (13–16), and tocol (17–24) (Fig. 1).
