3.1. Antioxidant activity of WR, BR and GBR extracts by the FTC
method, the TBA method and the DPPH radical scavenging assay
The antioxidant activities of WR, BR and GBR extracts were
measured by three different methods: the FTC method, the TBA
method and the DPPH radical scavenging assay. The FTC method
is used to measure the amount of peroxide at the beginning of
the lipid peroxidation, whereas the TBA method measures free radicals
presents after peroxide oxidation. The antioxidant activity for
both assays is described by per cent inhibition. As shown in Table 2,
both BR and GBR show significantly (p < 0.05) higher lipid inhibition
activity than WR, but BHT seems to be the most effective antioxidant
under these experimental conditions.
DPPH radical scavenging assays are based on the transfer of
electrons from a donor molecule to the corresponding radical. This
method is the simplest method for measuring the ability of antioxidants
