The application experiment showed that Pediocin 05-10 could retain its high anti-Listeria activity in pork ham at least for 10 days
(Fig. 5). In the control batch, L. monocytogenes counts increased from an initial value of 5.5 103 CFU/g to 3.3 107 CFU/g during
the whole incubation period. On the contrary, in the batch pretreated with bacteriocin, the counts of L. monocytogenes only increased
from the 640 CFU/g to 980 CFU/g over the same period. What is more, initial value of batch I was lower than that of batch
II (control) probably because some injured cells were not able to attach to the ham samples (Chung, Dickson, & Crouse, 1989; Nielsen,
Dickson, & Crouse, 1990). The results suggested Pediocin 05- 10 not only inhibited L. monocytogenes growth on the ham, but also
reduced its attachment to the ham.
