The goodness of fit between experimental and predicted data was
assessed by using the adjusted regression coefficient (adjusted-R2)
(Eq. (3)) and the root mean square error (RMSE) (Eq. (4)). The higher
the R2 value and the lower the RMSE value were, the better the fit was
considered. Analyses of variance (multifactor ANOVA) were run to
study the effect of process variables (microwave power, temperature
and treatment time) on L. monocytogenes inactivation. Values of
log (N/N0) at the selected times (Tables 1 and 2) were considered for
this purpose.Mean valueswere compared by the least significant difference
(LSD) test, with a confidence level of 95% (p b 0.05), using the
Statgraphics Centurion XV software program.
