Résumé/Abstract One of the major anthocyanins of blood orange juice, previously
designated as cyanidin-3-glucoside-acetate or cyanidin-3-rhamnoside, was extracted and
purified by semi-preparative HPLC. The structure of the pigment was elucidated by HPLC-
Mass Spectrometry and 1 H NMR spectroscopy to be cyanidin-3-(6-malonyl)-β-glucoside.
