The process by which processed Euchema seaweed is converted into commercial
gelling grade products is compared to the traditional extraction process in Fig. 5.1. The
process commences with selection and washing. Thereafter the process diverges from the
manufacture of extract carrageenans. The Euchema seaweed is soaked in potassium
hydroxide solution in situ before chopping and bleaching to reduce the colour of the
finished powder. After washing, drying and grinding, the powder is sterilised to control
the microbiological levels of the finished product, which are now tightly controlled by
legislation.
