2.2. Technological processes
WPC80 and skim milk powders were prepared from concentrates
obtained with a CT evaporator (Fig. 1). These powders were
compared to those produced using conventional processes (direct
spray-drying of preconcentrated WPC80 at 259.1 g kg1 TS and
falling-film evaporation of skim milk to 48–52% TS followed by
spray-drying, respectively). Before concentration in the CT evaporator,
skim milk was first concentrated on a falling-film evaporator
to avoid any limitation of the highest achievable dry matter due to
the maximum evaporative capacity of the equipment.
