Variation in the reducing power was observed in the three supplements as shown inTable 5. The results of reducing power in various
tissues supplemented with MOL (0.64) demonstrated better AA compared to SC (0.38) and GH (0.31). Generally, the present study has demonstrated potent AA of MOL and thus may be exploited as an important
source of improving the antioxidant status of meat from livestock. The
observed AAviathe transformation of Fe
3+
to Fe
2+
could be attributed
to the phenolic compounds which have been demonstrated to act as an
electron donor (Siddhuraju, Mohan, & Becker, 2002). This compound
can also serve as a reducing agent to oxidized intermediates of lipid
peroxidation processes and thus can act as primary or secondary antioxidants (Chanda & Dave, 2009)
