The growth of lactobacilli and the quantity of amino acids of the hydrolysate of tuna waste, added with molasses at 5, 10 and 15% (v/w) of waste, by digestion of L. brevis LB43 and L. plantarum LP64 were analyzed. Table 1 showed that L. brevis LB43 and L. plantarum LP64 grow rapidly in waste added with molasses at ratio of 10 % (v/w) of waste. According to the result of ninhydrin test, the hydrolysates digested by L. brevis LB43 and L. plantarum LP64 contained 0.26 and 0.33 g amino acid /g waste dried weight, respectively.
