Starch paste clarity values are given as the percentage
transmittance read directly from a spectrophotometer.
Generally, the paste clarity was high for cassava starch
but substantively low for millet starch. Among tuber and
root starches, the clarity was averagely high in cassava
and potato starch (> 40%) but was low among sweet
potato starch (22%). It was generally low among all
cereal starches averaging less than 25%
