Quantification of phenolic compounds in each sample will be carried out according to the method of Balange and Benjakul (2009). The sample (10 g) will be homogenized in 30 ml of distilled water and then makeup to 50 ml. The homogenate will be filtered and centrifuged at 5000 rpm for 10 min. The supernatant will be used to measure for phenolic content. The sample (0.5 ml) mixes with 0.5 ml of distilled water. Thereafter, 0.5 ml of Folin-Ciocalteu reagent (1:1 with water) and 2.5 ml of 2% sodium carbonate solution will be added. The mixture will be mixed thoroughly and placed in dark (40 min), and the absorbance was recorded at 725 nm. The total phenolic content will be calculated from the standard curve of gallic acid and expressed as µg gallic acid per gram sample in dry weight.
