2.11. Statistical analysis
ISM and OSM fabricated from the semimembranosus muscles of
eight (n = 8) beef carcasses were utilized in the experiment. The design
was a split-plot with randomized block design in the whole plot with
eight replicates, wherein semimembranosus muscles from each carcass
served as blocks. The effects of muscle location (ISM and OSM), storage
(0, 2, and 4 days), and their interactions were analyzed using the PROC
MIXED option (SAS, 2013) and the differences among means were
detected using the least significant difference (LSD) at a 5% level. In
addition, the PROC CORR option was used to determine the Pearson's
correlation coefficient between the differentially abundant proteins
and color attributes (SAS, 2013).
