2.4. PEF processing conditions for BPW and strawberry purée
The PEF system was first tested using BPW. Electric field
strengths of 28.0–33.6 kV/cm were used. The outlet temperatures
of each PEF treatment chambers were either 55.0 or 57.5 ± 0.5 ?C,
depending on the experiment. Once the PEF system had been ade-
quately tested on BPW, experiments began on strawberry purée.
An electric field strength of 24.0 kV/cm was used. PEF treatment
chamber outlet temperatures of 45.0 to 52.5 ± 0.5 ?C were used.
