Although the activity of lipase obtained from 1% soapstock is higher than that obtained by
using 0.5%, the conversion achieved from the last concentration
was higher, and that probably due to the fact that at 0.5% soapstock,
the maximum lipase activity obtained was after 12 h, which explains
that the active sites of the produced enzyme were not stayed
in contact with the agitator much time, consequently less shear
stress were created, accordingly the stability and the age of enzyme
was higher than that obtained after 24 h using 1% soapstock
