In general, the bioactive coating, previously developed for
application on broccoli
florets against L. monocytogenes, resulted to
be efficient also for application on green beans inoculated with L.
innocua.
Future experiments will be devoted to clarify how the mandarin
essential oil nanoemulsion improved the antimicrobial activities of
modified chitosan against different microbial species also on this
food matrix, as well as the fundamentals of the combination with
non-thermal technologies, such as HHP and PL.
