The study was carried out with 12 Landrace × Large White female pigs weighing ca 32 kg and reared under controlled conditions in a
typical livestock farm. The animals were equally divided into two
dietary treatments consisting from the same commercial basal feed but
differing in the oil source. Sunflower oil at 3% was the oil source in one
treatment (CONT-S), while linseed oil at 3% was the oil source in the
other treatment (CONT-L). Conventional breeding and management
procedures were employed throughout the feeding trial that lasted
90 d. At the end of the feeding trial, the animals were slaughtered and carcasses were split centrally and chilled at 4 °C for a period of 24 h prior
to dissection. Collected bone-free loins from the longissimus dorsi (LD)
muscle were trimmed to remove surface fat, vacuum-packaged and
kept frozen at −20 °C, until the day meat patties were manufactured
(less than 2 weeks).
