Again, no significant difference was found between both patios at any stage of the fermentation. However, a significant difference could be found between the initial and final stages in patio #2. This is due to the fact that Simpson’s reciprocal index put more weight on most abundant species, being more influenced by the values of evenness indexes than those of species richness. This explains the fact that, although there is an increase in species richness in patio #2 along fermentation time, these species are less evenly distributed, producing a statistically significant change in the nature of dominant species.
