Changes in microbial counts (bacteria, yeast and mould) of osmotically dehydrated and CaCl2 infused purple sweet potatoes at both temperature for 25 day are shown in Figure 7 and 8. Shelf life of potatoes samples. Microbial including bacteria, yeast and mould in potatoes are about 3 to 4 log CFU/g, respectively. Total plate counts (TPC) ranged from 3.65 to 3.80 log CFU/g increased after 25 day storage. While, yeast and mould counts (YMC) ranged from 3.64 to 3.81 log CFU/g increased after 25 day storage. The samples stored at room temperature was microbial growth more when compared 4˚C. Osmotic dehydrated purple sweet potato that infused with CaCl2 can be stored for a period of 25 days (4C). In storage at room temperature, can be studied in a 10-day period due to the growth of microorganisms in samples of sweet potato.
