From literature reports, it was found that the antioxidant activity of plant extracts significantly depends on total phenolic content and other phytochemical compounds such as proanthocyanidins and flavonoids.
From the above studies it was found that the radical scavenging activity of the color extracts followed a linear trend (r ¼ 0.8) with total phenolic content therein.
Since the color extracted by solvent extraction contain significantly higher amount of phenolic compounds than in SC-CO2 extracted color, the former showed higher antioxidative potential.
