The nutritive values of tropical fruit like coconut become interesting for
consumers and useful for breeding program in Thailand. The two experiments were
carried out in Completely Randomized Design with 3 replications. In the first
experiment, the essential and non-essential amino acid content of liquid and solid
endosperm of potential market varieties of coconut such young tender nut of
Aromatic Green Dwarf (Nam Hom) and mature nut of Hybrid Nam Hom X Kathi
(NHK) were studied. It was found that among 18 kinds of amino acids, the
significantly differences were found on Aspatic acid, Cystine, Serine, Isoleucine, and
Phenylalanine content while highly significant differences were found on Histidine
and Methionine contents. The second experiment aims to determine the fatty acid
composition of Virgin coconut oil of 20 coconut accession from coconut field gene
bank of Thailand at Chumphon Horticultural Research Centre. The result showed
that there were significantly differences on every single of eight fatty acid
composition. Among eight fatty acid, the lauric acid is the most consumers concern
and it was found that lauric acid content in VCO showed excellent (>49%) in the
varieties of Chumphon Hybrid no.2, Sawi Hybrid no.1(MAWA), Hybid Chumphon
60, Renell Tall, Malayan Yellow Dwarf, and Thai Red Dwarf. These varieties were
recommended for VCO processing.
