Taking into account the previously demonstrated promotional effect of TC materials on wort fermentation, with maltose as the main sugar, pure maltose and glucose media were examined asmodel substrates as a first step to evaluate the effect of immobilized cells on the rate of fermentation of maltose containing raw materials. Therefore, the aim of this investigation was to demonstrate thatTC may be generally used as promoter (carrier for yeast immobilization) of extremely low temperature maltose fermentations. Forthis reason a cryotolerant and alcohol resistant S. cerevisiae strainwas employed. The immobilized yeast was used after freeze-dryingto evaluate possible commercialisation for industrial or home-scaleuses in the form of ready-to-use active dry formulations.
