Known concentrations of gallic acid (Sigma–Aldrich, Germany; 5–60 μg/ml in ethanol) were treated in the same manner as for water extracts of yogurts and the regression of gallic acid standards was used to convert unknown samples to total phenolic content (μg gallic acid equivalent, (μgGAE)/ml).
