The clarification tests were performed only on the pomegranate
juice obtained from homogenates with 100 g/100 g arils (PJ7
sample) with different enzyme concentration, maintaining time
and temperature constant (120 min at 25 C).
Composition and turbidity measurements were carried out, and
the results are reported in Table 5.
