The measured permeability of wax-hydrocolloid coatings
is not suf®cient to draw any conclusions about the relationship
between respiration and internal gas concentration, or
the taste of juice extracted from coated fruits. Deliberate
disturbance by gums in the ordered structure of wax coatings,
small changes in their roughness, and the fact that
stomata are less blocked by such coatings led to these coatings
effectively reducing the disadvantages related to
commercial wax coatings.
