4. Conclusion
Four decades of phenotypic selection in Atlantic salmon domestication
programmes has significantly increased the growth capacity
of the fish and altered the flesh texture, connective tissue
content and connective tissue properties. Salmon from selected
lines were 1.3 kg heavier at slaughter (4.5 kg vs. 3.2 kg) compared
with unselected salmon. Furthermore, the flesh of the selected salmon
was softer and their connective tissue yield was lower with a
greater content of glycine, hydroxylysine, hydroxyproline and proline,
and a lower content of lysine. However, the solubilisation of
collagen in acid, acid/pepsin and insoluble fractions was similar
