The passion fruit or lilikoi comes in a wide variety of
shades of red, purple, and the more common yellow flavocarpa
variety. All of the fruit are initially green and
should be harvested when they are at least half or more
yellow or purple in color. Fruit should be packed in cartons
with only two or three layers of fruit, with protection
provided to stop the stems from damaging other fruit in
the carton. Holding the fruit at low temperatures after
harvest lengthens postharvest life.
