CONCLUSIONS
The result of the performed studies is that the opportunity of the isolation of carotenoids as valuable biologically active substances from a recoverable natural resource was demonstrated on the example of roots of Shantane carrots. The dependence of the yield of carotenoids vs. the process parameters was determined. The predominant effect of the pressure of supercritical carbon dioxide on the total yield of the
carotenoids was discovered at the almost constant selectivity of the process on βcarotene in the pressure range from 150 to 350 atm. One can recommend the pressure of 350 atm at 80°C as the optimal extraction conditions; the yield of carotenoids at these parameters is ~35%.
