Confocal laser microscopy was used to observe the microstructure of formulated beverages. Fig. 8 shows the gross morphology of the HPH treated formulations. Overall, all samples showed a porous and heterogeneous microstructure, comprising of dense aggregates of protein particles dispersed in a continuous phase. Individual fat emulsions could not be observed in the confocal analysis (Fig. 8) due to the presence of a highly dense protein network. No differences in the microstructure and morphology was observed between the different samples. During HPH treatment, thermal and mechanical effects (shearing, turbulence and cavitation) may disrupt the network, making it difficult to detect with the adopted confocal methodology.
