Water holding capacity (WHC) was also determined. The weight
of an empty centrifuge tube was recorded, and 15 mL yogurt was
poured into it, after which the entire weight was recorded. The
yogurt was centrifuged (Anting, LXJ-IIB, Shanghai, China) at
5000 rpm for 20 min, and the supernatant was drained. The
centrifuge tube was inverted for 10 min and weight was measured.
