The results obtained with a combination of the three
types of nitrogen sources (batch 15 A, B, and C) are given
in Table 11. Even though the sugar concentration used
under our experimental conditions was lower than that used
for Lactobacillus rhammosus cultures, the mean specific
lactic acid production rate (g) was higher for B. coagulans
TB/04. This parameter corresponds to the capacity of the
cells to produce lactic acid.
