2.2. Enzyme pre-treatment
Ginger powder (20 g) was sprayed with the selected four enzymes viz. cellulase, pectinase, α-amylase and viscozyme (mixture of enzymes) individually at 0.5% (ml/w) concentration, as well mixed aqueous solution and pH of the material adjusted to 4.5–5.0 with citric acid in water. Well mixed sample was incubated at 50 ± 2 °C for a period of 30–120 min. In case of protease enzyme, aqueous solution of enzyme at a concentration of 0.5 g/g of ginger powder was employed with the pH adjusted to 6.0 and incubation carried out at 55 °C. After incubation, the sample was taken in a glass column for resin extraction. Similarly, enzymes were also employed at 0.25% and 1% concentrations to ginger powder before extraction of the resin.
