As seen from Fig. 2a, the percentage changes in diameter and thickness for the dried products are strongly affected by
the drying methods applied and the initial thickness of the slice in MVD. In Fig. 2a, a lower negative value denotes
greater shrinkage while a higher positive value indicates more expansion of the sample. AD, FD, as well as VD
resulted in shrinkage while only MVD caused expansion in the samples of the initial thickness of higher than 2 mm.
AD-4 products shrank 22% in diameter, but about 65% and 56% in thickness at the center and the edge, respectively. Shrinkage was the highest for AD-4 products followed by VD-4 and FD-4 ones. A high level of variability of the
